Mullein Tea Muffins

Earthy mullein adds a subtle herbal note to these soft, fluffy muffins — a cheeky way to bake with tea.

Ingredients (makes 8–10)

  • 3 Naugh-Tea Brews Measuring Spoons of Naugh-Tea Brews Mullein

  • ½ cup hot water

  • 1 ½ cups self-raising flour

  • ½ cup butter (melted)

  • ½ cup sugar

  • 1 egg

  • ½ cup milk

  • Zest of 1 lemon


Method

  1. Brew concentrate – Steep mullein in hot water for 10 minutes, strain, and cool.

  2. Mix batter – Combine butter, sugar, and egg. Add flour, milk, lemon zest, and mullein infusion.

  3. Bake – Spoon into muffin cases and bake at 180°C for 20–25 minutes.


Serving Suggestion

Serve warm with a drizzle of honey or a dusting of icing sugar.
